Vanilla Chiffon Cake with Vanilla Sauce

Chiffon significa «gasa» en francés, y este pastel es así de ligero, como el viento. El secreto es batir las claras hasta formar un merengue blanco y esponjoso, e integrarlo con suavidad a una masa hecha con aceite: miles de burbujitas de aire sostienen todo el pastel. Al salir del horno se enfría boca abajo para que no se baje. Lo inventó Harry Baker en Los Ángeles en 1927, y guardó la receta en secreto veinte años. Con una cucharada de salsa de vainilla, dulce y suave, es como comerse una nube.

Chiffon means "sheer fabric" in French, and this cake is just as light, like a breeze. The secret is whipping egg whites into a snowy meringue and gently folding it into a batter made with oil: thousands of tiny air bubbles hold the whole cake up. It cools upside down so it doesn't sink. Harry Baker invented it in Los Angeles in 1927 and kept the recipe secret for twenty years. With a spoonful of sweet vanilla sauce, it's like eating a cloud.

戚风(chiffon)在法语里是「轻纱」的意思,它就像风一样轻。秘诀是把蛋白打成雪白绵密的蛋白霜,再轻轻拌进用油做的蛋糊里,让成千上万个小气泡撑起整个蛋糕。烤好后要倒扣着放凉,蛋糕才不会塌。1927 年,洛杉矶的 Harry Baker 发明了它,把配方保密了二十年。淋上一勺香甜的香草酱,软绵绵、香喷喷,像吃了一口甜甜的云。
